Orange Pancakes

1. Combine in big bowl:

  • 2 cups all purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda

2. Combine in 2nd bowl:

  • Zest from one orange, cut super small
  • 250ml orange juice
  • 125ml coconut milk
  • 60ml vegetable oil
  • 15ml vanilla extract
  • 2 eggs

The orange juice should be around what you get from two oranges or one big really juicy one. You can make up the difference with coconut milk if you come up short and don't want to crack another one open.

3. Add wet to dry and mix

You have 10 seconds to mix these. That's it. You want them just barely combined for maximum fluff.

4. Let the batter rest for at least 30 mins.

You can let it rest overnight in the fridge if you want. Great thing to mix up the night before for a lazy breakfast.

5. Fry them on a lightly-greased pan or whatever

You want the surface of the pan around 350-375. Use a heat gun and adjust heat as needed and try to keep it in the sweet zone.


Notes

  • Baking soda + powder have plenty of sodium so I don't add any extra salt. Save your salt budget for a slice of bacon or some beans.

  • Speaking of beans, you can put some right in the batter. Sometimes I'll add up to a half cup of pureed black beans to the wet ingredients.
