Orzo Salad

1. Cook orzo

  • Boil in salted water, broth, or a mix of both

2. Drain + cool orzo

  • Keep a bit of the water

3. Add shit and mix and eat at room temp:

Here are some options for good combos. Add salt + pepper as you like. You can eyeball the amount of each without much trouble.

Option 1, tomato / basil

  • Olive oil
  • Halfed cherry or grape tomatoes
  • Feta
  • Walnuts (bonus for roasting first)
  • Fresh herbs (basil, parsley)
  • Olives

Option 2, watermelon / lemon / basil

  • Olive oil & lemon juice
  • Watermelon cubes
  • Lemon zest
  • Fresh basil
  • Feta

Option 3, arugula / tomatoes / thyme

  • Olive oil & lemon juice
  • Arugula
  • Fresh thyme
  • Green onions
  • Mozzarella

But really you can mix and match all of these pretty easily.


Notes

  • This really needs fresh herbs.

  • This doesn't need any salt if you salt the pasta, add a bit of the leftover water and are using a cheese.

  • Keeps pretty well. Great to make a big bowl and keep in fridge for a week of sides and snacks. Be warned that some things like olives / grapes / walnuts can turn the pasta a weird purple color. Still good to eat but can look weird.
