Mexican Black Beans

1. Fry in a little oil for a few minutes:

  • 1 medium yellow onion, diced

2. Add, and fry for a minute or two:

  • 1 tbsp Mexican Spice Mix (see other recipe)
  • Red pepper flakes, if you want spice
  • A bit of salt

3. Add, and stir until well combined:

  • 1/2 tsp of corn starch

4. Add:

  • 1 can of black beans, drained and rinsed
  • 1/2 cup water or stock or beer

5. Simmer on low until the water is mostly gone

You want it saucy

What To Do With Them

  • Put them in burritos or on nachos or whatever

  • Blend them up and use them as the basis for a layer dip, or a spread on a breakfast tortilla

  • Freeze them and you have ready-to-reheat beans for a quick burrito. (Use a baking sheet so they don't freeze into a giant mass.


  • You wouldn't eat this alone on rice or anything. The flavours are pretty neutral because this is a bean base you can use for a lot of different dishes. Handy to have around for a quick meal.

  • If you're going to blend them, add some cilantro and garlic to the blender. If you don't like raw garlic taste, add it to pan with the onion. You can also retain some whole beans, and mix them with the blended bits later for a chunky-peanut-butter kinda vibe.
