Emergency Cookies

1. Combine in single bowl:

  • 140g cups flour (~1.25 cups)
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 6 tbsp of sugar (white or brown)
  • 1/3 cup chocolate chips/whatever

2. Add to the dry ingredients:

  • 4 tbsp "milk"
  • 1 tsp vanilla extract
  • 2 tbsp vegetable oil (or melted "butter")

3. Put 'em on baking try in walnut-sized balls

  • Flatten and round them off a little with your hands. You should end up with about 12 small balls on the tray.

4. Cook for 8 minutes at 380

They won't look quite done but they are what they're gonna be. Leave for another minute or two if you roll them in coconut (see notes) or have bigger balls

NOTES

  • These are not the best cookies. But they are the fastest. And they have no eggs so you can eat the dough. And when cooked they're soft. If you like a crunchy or chewy cookie go somewhere else

  • Use whatever combo of white and brown sugar you have.

  • Variants: 1) replace the chocolate chips with apples + add some cinnamon. These will take longer to cook. 2) Roll in coconut with or without the chocolate chips. I'd say roast the coconut but these are quick cookies not try-hard cookies.
